The domaine's winemaking approach centers on precision and minimal intervention. Fermentations proceed slowly at cool temperatures using indigenous yeasts. White wines age in French oak barrels, with new oak limited to 20-25% for Premier Crus. The cellar maintains strict temperature control during both fermentation and aging. Malolactic fermentation occurs naturally, and the wines typically spend 12 months in barrel followed by 6 months in steel tanks before bottling.
