Prior to founding his own winery, Bessin worked as an accountant before returning to take over his family's vineyard holdings, which had previously been leased to larger producers in the region. As a first-generation winemaker, Bessin transformed these family parcels into a respected independent domaine. The estate remains family-operated, with Jean-Claude's son Romain gradually taking on more responsibilities in both vineyard management and cellar work since joining the domaine in the 2010s. The Bessin domaine encompasses approximately 12 hectares of vineyards spread across several appellations in Chablis. Their holdings include parcels in Chablis village, Premier Cru, and Grand Cru sites. The domaine owns plots in the Premier Cru vineyards of Fourchaume, Mont de Milieu, and La Fourchaume Vieilles Vignes, where some plantings date back to the 1930s. Their most prestigious holding is in the Grand Cru Valmur. The vineyards feature the region's characteristic Kimmeridgian limestone soils, rich in fossilized oyster shells that contribute to the distinctive minerality of Chablis wines. All vineyards are planted exclusively to Chardonnay, following the appellation regulations.
