Amiot Servelle

Summary
Domaine Amiot-Servelle is an 8-hectare family estate in Chambolle-Musigny, Burgundy, focusing on Pinot Noir from limestone-rich soils across village, premier cru, and grand cru vineyards with vines averaging 40 years old. The domaine, now led by Priscilla Amiot since 2008, maintains traditional Burgundian practices including organic viticulture, native yeast fermentations, and measured oak usage to faithfully express each vineyard's distinctive character.
Heritage & Leadership
Domaine Amiot-Servelle was established in 1986 when Christian Amiot and Elisabeth Servelle merged their family vineyards through marriage. Based in the village of Chambolle-Musigny, the domaine combined parcels from both families' holdings, creating a foundation of exceptional vineyard sites primarily in Chambolle-Musigny. In 2003, their daughter Priscilla Amiot began working alongside her parents, gradually taking on increasing responsibility. By 2008, Priscilla had assumed primary leadership of the domaine, with her parents stepping back from day-to-day operations while remaining involved in an advisory capacity. Under Priscilla's direction, the domaine achieved organic certification in 2013, formalizing practices that had been evolving at the estate for several years prior. The transition represents a continuation of the family's commitment to expressing their terroir with precision and authenticity.
Vineyards & Wines
Domaine Amiot-Servelle manages approximately 8 hectares of vineyards, with the majority located in Chambolle-Musigny. Their holdings include village-level parcels and several premier cru sites in Chambolle-Musigny, including Les Amoureuses, Les Charmes, and Les Derrière la Grange. The crown jewel of their portfolio is a 0.3-hectare parcel in the Grand Cru Bonnes Mares, situated on the Chambolle-Musigny side of this shared Grand Cru. The domaine also maintains smaller holdings in neighboring Morey-Saint-Denis and Gevrey-Chambertin. The vineyards feature limestone-rich soils typical of the Côte de Nuits, with variations in clay content and limestone structure contributing to the distinctive character of each site. The vines average 40 years of age, with some parcels exceeding 70 years. All vineyards are planted to Pinot Noir, with the exception of a small parcel of Aligoté in Chambolle-Musigny.
Philosophy & Practice
Domaine Amiot-Servelle's approach centers on meticulous vineyard work as the foundation for wine quality. Since receiving organic certification in 2013, the domaine has eliminated all synthetic chemicals, instead employing natural preparations and cover crops to maintain vineyard health. Harvest is conducted entirely by hand, with rigorous sorting both in the vineyard and at the winery. In the cellar, Priscilla Amiot employs traditional Burgundian techniques with minimal intervention. Fermentations proceed with native yeasts in open-top wooden vats, with gentle extraction methods that typically include a cold soak of 5-7 days followed by fermentation lasting 15-18 days. New oak usage varies by wine, ranging from 20% for village wines to 50% for Grand Cru bottlings, with aging periods of 12-18 months depending on the classification. The wines are bottled unfined and with minimal filtration only when necessary. This disciplined approach results in wines that clearly articulate the distinctive characteristics of each vineyard site while maintaining the elegant, perfumed profile for which Chambolle-Musigny is known.
